Eggplant parmigiana w couscous

This classic Italian vegetarian dish is composed by layering roasted eggplant with a house made garlic, basil and tomato sauce and the addition of capsicum and zucchini. Staying true to the original recipe we add a small amount of mozzarella too and serve it all on a bed of couscous.
