The hero of this dish is our native, wild-caught barramundi which comes from Northern Australia. Barramundi is renowned for its mild, buttery flavour and succulent texture; it’s a perfect choice for fussy fish eaters! We oven bake the fish in a house-made tomato sauce with capers and serve it on a bed of freekeh with sautéed mushrooms. Freekah is a roasted green durum wheat grain with a delicious nutty flavour that boasts high protein and low calories.
